Why Our Eggless Cakes Stay Soft (and How to Keep Them That Way)

People are often surprised that an eggless cake can be this soft. Here is what makes eggless sponge work, and how to store your cake so it stays moist until the last slice.

“This is eggless? Really?” We hear it at the counter all the time. There is an old belief that a cake without eggs has to be dense or dry. It doesn’t — and since every cake we bake is eggless, we have spent a long time making sure of it.

What eggs normally do in a cake

In a regular sponge, eggs help trap air, bind the batter and set the structure as it bakes. Take them out and you need other ways to do each of those jobs. That is the whole craft of eggless baking: not leaving something out, but replacing what it did.

How eggless sponge stays light

  • Lift from the right leaveners. Eggless batters rely on a careful balance of raising agents and a gentle, even bake so the crumb rises without collapsing.
  • Moisture that stays put. Dairy and the right fat keep the crumb tender, so the cake is soft on day one and still pleasant the next day.
  • Not over-mixing. Over-worked batter turns chewy. A light hand gives an open, fluffy crumb.
  • Soaking and layering. A light syrup between layers and fresh cream keep each slice moist all the way through.

How to keep your cake soft at home

  • Fresh cream and fruit cakes: keep them in the fridge in the box, and eat them within the next couple of days. Take the cake out 15–20 minutes before cutting so the cream softens and the flavour opens up.
  • Chocolate and truffle cakes: also refrigerate, but let them sit a little longer at room temperature before serving — cold ganache tastes muted.
  • Cut pieces: press a piece of cling film or foil against the cut face so the sponge doesn’t dry out.
  • Delhi summers: don’t leave a cream cake in a hot car or on the dining table for long. Carry it flat and get it into the fridge quickly.

Want to bake at home too?

Eggless baking at home is fun, and a few rules help: weigh your ingredients, don’t open the oven in the first 20 minutes, and let the sponge cool fully before frosting. But when it’s a birthday and there is no time to experiment, let us do the baking.

Browse our eggless cake menu, order a custom birthday or photo cake two days ahead, or drop in at the shop opposite Dashrathpuri Metro Gate No. 3 and try a pastry first.
